Tomato, Tenderstem Broccoli and Za’atar Salad

Delicious on it's own, accompanied by a warming soup or bulked out with your favourite grains, this is the ideal September salad. Tomatoes are one of the best sources of carotenoid lycopene which is known for improving sperm quality, making this recipe perfect for your partner too.

 

Ingredients

FOR THE SALAD

  • 200 g tomatoes (I like a combination of cherry and plum)

  • 125 g tenderstem broccoli

  • 3 tbsp cooked chickpeas

  • 2 tbsp fresh mint, shredded

  • 1 banana shallot, finely chopped (optional)

    FOR THE DRESSING

  • extra virgin olive oil

  • 1/2 lemon juiced

  • 1 tbsp za'atar

  • pinch sea salt and black pepper

Directions

  1. Firstly cook the broccoli in boiling water for 2 minutes. Then plunge into a bowl of iced cold water.

  2. Chop the tomatoes in half.

  3. Just before serving whisk together the dressing ingredients.

  4. Then toss the tomatoes, broccoli, cooked chickpeas, finely chopped shallots and herbs with the salad dressing and pile onto a serving dish.

  5. For a more substantial meal, serve with spelt, quinoa or toasted buckwheat.
