Shiitake Mushroom Sauté with Noodles

This is a brilliant meal when you’re in a hurry and want something nourishing and comforting, quickly. This recipe serves two, increase accordingly for a family meal. Here, I used fresh shiitake, but dried can also work well. Dried shiitake have a richer umami flavour, that is even more intense than the fresh mushrooms.


 

Ingredients

  • 450g shiitake mushrooms, sliced

  • 50g tin of anchovies, chopped

  • 2 shallots, finely diced

  • 2 cloves of garlic, crushed

  • 1/2 tbsp rice vinegar

  • Soy sauce

  • 25g of coriander leaves

  • chopped

    sliced spring onions, green part only

  • Juice from ½ lime

  • Your noodles of choice

  • Rapeseed oil

Directions

  1.  Heat a little rapeseed oil in a wok and add the sliced mushrooms. Cook on a high heat for 10-15 minutes until golden.

  2. Remove from the pan. Add a little more oil and add the shallot, garlic and chopped anchovies. Cook for 4-5 minutes on a high heat breaking down the anchovies with a wooden spoon.

  3. Add the lime juice and rice vinegar and cook until the liquid has reduced.

  4. Return the mushrooms with the sliced spring onion tops to the pan and heat through.

  5. Add a little soy sauce to taste. Do not add much as the anchovies add a lot of saltiness to the dish.

  6. Serve sprinkled with fresh coriander and noodles of your choice.
