Green Bean, Radish and Sesame Seed Salad

Sesame seeds are an excellent addition to your diet if you are looking to improve your fertility, particularly for men as research has shown that they improve the quality of sperm. They are also excellent for nourishing the blood.

 

Yields: 2 servings

Ingredients

  • 250g green beans, trimmed

  • 150g red radishes, thinly sliced

  • 15g fresh mint, finely shredded

  • 15g flat leaf parsley, chopped

  • 1 tbsp extra virgin olive oil

  • 1 tsp honey

  • ½ tsp Dijon mustard

  • squeeze of fresh lemon juice

  • 1 tbsp whites sesame seeds, toasted

Directions

  1. Bring a large pot of water to boiling. Cook the green beans for 3-4 minutes and then plunge into cold water to stop them cooking further and to help them keep their colour.

  2. In a small bowl whisk together the olive oil, lemon juice, honey and mustard. Season with salt and pepper.

  3. Place the green beans in a large bowl and toss in the dressing with the radishes. Sprinkle over the chopped herbs and serve immediately or at room temperature.
