Asian Style Stuffed Rainbow Trout

Rainbow trout is a delicious and versatile fish, and is an excellent source of fatty acids that are very important in fertility. The asian style filling goes really well with the fish and is a delicious and very easy twist.

 

Yields: 2 servings

Ingredients

  • 1 large whole rainbow trout

  • 1 tbsp desiccated coconut

  • 1 tbsp raw peanuts, chopped

  • 1 large handful of coriander, roughly chopped

  • 2 spring onions, thinly sliced

  • 1 red chilli, thinly sliced (optional)

  • 1 unwaxed lime

  • Rapeseed oil

Directions

  1. Preheat the oven to 200oC. Line a baking sheet with nonstick baking paper and place the whole trout on top.

  2. Grate a little zest from the lime – around 1 tsp – and place in a bowl with the other ingredients. Season with sea salt and black pepper and squeeze a little lime juice.

  3. Mix this together and then divide the stuffing into the fish cavities.

  4. Drizzle a little oil over the fish skin and bake for 25 minutes. 

  5. Serve with rice or noodles, wilted greens and a little soy sauce.
