Chicken Broth Noodle Soup
/Rather than having a rich soup base, the chicken broth stands out as the star in this meal. This is a comforting, warming and healthy bowl and is perfect as a lighter meal during the Christmas period.
Ingredients
a dash sherry
a dash fish sauce
1/2 lime, juiced
kimchi
2 bowls of chicken broth
1 red chilli
1 thumb sized piece of ginger
CHOOSE FROM THESE INGREDIENTS TO ADD TO YOUR BROTH...
sliced spring onions
shredded spring greens/ pak choi/ mange tout
sliced chicken breast
a handful of cooked noodles
Directions
Use the bowls you will use to serve the broth as a measure for 2 portions of chicken broth.
Add the magic 5 ingredients to your broth: sherry, fish sauce, juice from 1/2 lime, thinly sliced red chilli and ginger sliced into matchsticks to your broth. Warm through.
Then choose from the following to add to your broth: sliced spring onions, shredded spring greens, pan choi, mange tout, sliced chicken breast, a handful of cooked noodles.
Serve with kimchi and a little soy sauce.
