Honey Roasted Carrots with Feta and Walnuts

Carrots are a rich source of beta carotene that the liver then converts to vitamin A. Research has shown that carrots can help to boost sperm health, particularly mobility due to this wonderful antioxidant, beta carotene. I am also obsessed with pickled walnuts, and they go so beautifully with this dish.

 

Yields: 4 servings as a side

Ingredients

  • 400g rainbow carrots (small ones leave whole and big ones halved)

  • 1tbsp honey

  • 1 tbsp extra virgin olive oil

  • 1/2 tbsp smoked paprika

  • 1/2 tbsp fresh thyme leaves

  • 1/2 tbsp chopped mint

  • 4 pickled walnuts, sliced

  • 100g feta cheese

Directions

  1. Mix the honey, olive oil and paprika together and toss the carrots in the mix, making sure they are all evenly coated.

  2. Spread the carrots out on a baking sheet and sprinkle over the thyme leaves. Roast for 20-25 minutes, tossing halfway through.

  3. Bake until they are golden on the edges. The carrots should be tender but not too soft when tested with a sharp knife.

  4. Slice the pickled walnuts and scatter over the carrots. Return the tray to the oven for a couple of minutes.

  5. Drizzle with a little extra virgin olive oil and sprinkle over the chopped mint and feta.
