We like to serve these with seasonal fruit and a little warmed honey. Soaking the kefir overnight is a traditional method that breaks down phytic acid in grains that reduces the absorption of important minerals for fertility health.
2 cups kefir
2 cups spelt flour
1 tbsp butter, plus a little extra for the pan
2 organic eggs
1 tsp baking powder
half tsp sea salt
First soak the spelt flour in the kefir overnight.
The next morning preheat the pancake pan. Lightly beat the eggs and add to the spelt flour and kefir with the baking powder and sea salt.
Melt 1 tbsp of butter and add to the mixture. If the batter looks a little thick add a little more kefir, or you could use milk.
Add a little butter to the pancake pan and then add a ladle of the pancake mixture. Flip the pancake when you see bubbles forming on the surface of the pancake.
