Sardines Two Ways

Fresh sardines are delicious simply barbecued and served with lemon in the summer but tinned sardines are a store cupboard superstar.

 

Ingredients

BARBECUED SARDINES

  • Sardines

  • lemon juice

  • paprika

  • garlic

  • olive oil

    SARDINES OR ANCHOVY BUTTER

  • 1 tin boneless sardines or anchovies, drained

  • butter (slightly less weight than sardines or anchovies)

  • 10-15 (optional) capers, finely chopped

  • lemon juice

Directions

BARBECUED SARDINES

Marinade the prepared sardines in lemon juice, paprika, garlic and olive oil for  30 minutes and barbecue for 2-3 minutes on each side. Serve with chopped parsley.

SARDINES OR ANCHOVY BUTTER

Put all the ingredients in a bowl and mash it with a fork and put into a ramekin dish in the fridge to use dur­ing the week.
